This is an amazing recipe. The chicken is smothered with mushrooms, onions, bacon, and of course, a little bit of love for the family.
Ingredients
- 4 (8 oz) chicken thighs (Organic Boneless Skinless, Costco)
- 1 tsp paprika
- Salt and pepper to taste
- 4 slices of bacon, cut into ½ inch pieces
- ⅓ cup chicken broth
- 4 oz sliced mushrooms
- ¼ cup organic heavy whipping cream
- 2 scallions, chopped finely
Direction
- Preheat oven to 400 degrees
- Season chicken thighs on both sides with paprika, salt and pepper
- Cook bacon in a oven safe pan over medium heat until browned and place on a plate for later.
- Drain some of the bacon grease from the pan.
- Place chicken thighs in the same pan and cook for 3-4 minutes.
- Flip chicken over and place in the oven and cook for about 25 minutes
- Take chicken out of the oven and place on a plate for later.
- Return the pan to the stove, add chicken broth while whisking up the brown bits at the bottom of the pan. Add mushrooms and cook for 3-4 minutes.
- Pour in heavy whipping cream and add your salt and pepper to taste. Let simmer for 2-3 more minutes on medium heat.
- Return the chicken, add bacon and scallions and serve!
