Smothered Chicken with Mushroom

This is an amazing recipe. The chicken is smothered with mushrooms, onions, bacon, and of course, a little bit of love for the family.

Ingredients

  • 4 (8 oz) chicken thighs (Organic Boneless Skinless, Costco)
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 slices of bacon, cut into ½ inch pieces 
  • ⅓ cup chicken broth
  • 4 oz sliced mushrooms
  • ¼ cup organic heavy whipping cream 
  • 2 scallions, chopped finely 

Direction

  1. Preheat oven to 400 degrees 
  2. Season chicken thighs on both sides with paprika, salt and pepper
  3. Cook bacon in a oven safe pan over medium heat until browned and place on a plate for later. 
  4. Drain some of the bacon grease from the pan.
  5. Place chicken thighs in the same pan and cook for 3-4 minutes.
  6. Flip chicken over and place in the oven and cook for about 25 minutes 
  7. Take chicken out of the oven and place on a plate for later. 
  8. Return the pan to the stove, add chicken broth while whisking up the brown bits at the bottom of the pan. Add mushrooms and cook for 3-4 minutes. 
  9. Pour in heavy whipping cream and add your salt and pepper to taste. Let simmer for 2-3 more minutes on medium heat.
  10. Return the chicken, add bacon and scallions and serve!
